They are not the other white meat that you find in conventional grocery stores. Scottish Highland Cattle are an old heritage breed known for its ability to turn low quality forage into premium quality beef. Highlands have lean, well-marbled flesh that ensures tenderness and succulence with a very distinctive flavor. The benefits to having a diet with Highland beef  is that there is a lower cholesterol and fat content but higher protein and iron content than conventional, store bought beef. Like the other Heritage breed meats, cooking low and slow will prove that there is still great tasting food out there!
